Wilhelm Borgstrom

Executive Chef, Pazzaluna Urban Italian Restaurant and Bar
Chef Borgstrom joined MHC in 2009, bringing an extensive background in both restaurants and hotels, most recently as a Regional Executive Chef/Regional Manager with McCormick & Schmicks’s. While working with Chef Harper, Chef Borgstrom serves as the Executive Chef of Pazzaluna, and directs all culinary operations for restaurant Max, The Hotel Minneapolis – a Doubletree Hotel and RJ’s American Grill.
During his tenure with M&S, Chef Borgstrom was responsible for all
aspects of restaurant operations for the seven state Midwest region,
including 16 restaurants and a 145-member management team. In
addition to managing the region, Chef Borgstrom also served as a
member of the team responsible for opening 18 new restaurants over the past four years. In addition to his nine years with M&S, Chef Borgstrom has also served as the
Executive Chef, or Operations Manager for numerous hotels, restaurants and catering organizations
including: Grandma’s Inc. in Minneapolis, Hard Rock Café in St. Louis, Chicago, and Hollywood, Promus Hotel Corporation, Regal Hotels International, and Bon Appétit at the Minnesota History Center. Chef Borgstrom is a family man who loves to cook for the ever-growing roster of friends his children bring home. We are thrilled to have him as part of our team and look forward to his leadership, and his
ability to mentor our growing team of culinary professionals.

Eli Wollenzien
Corporate Executive Chef
Chef Eli Wollenzien has been a professional chef in the Minneapolis area for the past 9 years. Originally from River Falls, Wisconsin, Chef Eli began his career working in western Wisconsin supper clubs. His culinary curiosity brought him to Minneapolis where he studied Culinary Arts at the Arts Institutes of Minnesota. Eli’s passion for culinary arts and his dedication to professionalism and perfection has fueled his career in some of Minneapolis’s best restaurants. Beginning as a sous chef with Pickled Parrot, Eli had the opportunity to expand his culinary abilities to include Asian and Caribbean influences. This experience led him to a position of Executive Chef with a new Caribbean concept, Kokomo’s Island Café. Building on a dedication to guest satisfaction and a drive to expand his culinary portfolio, Eli continued his career downtown Minneapolis with Zelo Restaurant. For the last three years Eli has been the culinary force behind opening and developing the new restaurant concept, CRAVE. He continues to act as Corporate Executive Chef of CRAVE Restaurant, with metro locations in Edina, Mall of America, and The Shops at West End, in St. Louis Park.
